Strawberry Brancakes

This is essentially strawberry-filled pancakes with bran inside. So aside from getting some hot very flavorful flapjacks you are getting good fiber as well! Kellogg's All Bran cereal, Hungry Jack Buttermilk Complete pancake mix, and olive oil were my preferred choices for this recipe. This recipe make approximately 6 - 8 pancakes, enough to stuff one person for breakfast or satisfy 2 people.

 

INGREDIENTS:
1 cup pancake mix
cooking oil (for pan/griddle)
3/4 cup water or skim milk
3 or 4 medium or large strawberries
1/2 cup all bran cereal
sprinkles of cinnamon (optional)
syrup (optional)

PUTTING IT ALL TOGETHER:

Put the bran and some of the 3/4 cup milk into a cereal bowl and let it sit. Chop up the strawberries as small as possible and let that sit. Now stir the cereal bowl with a spoon so the bran and milk turn to mush. Put the pancake mix, "mush", strawberries, and remaining milk into a mixing bowl and stir. Add the cinnamon here if you wish. You will need to add a little extra milk while stirring to add some viscosity (less lumpiness)!

Now pour or spoon this batter as small discs or clumps unto your heated oiled griddle or frying pan. Arrange and flip the batter as you would for normal pancakes and serve on dish. No butter or margarine necessary. A little syrup a plus!

If you wish, refrigerate any leftover brancakes to eat as a snack (without syrup) for the next day or day after.
