Cookie-Brownies

I could have easily called this Double Decker Brownies, but that would easily infringe on Duncan Hines copyrights. It's not a recipe from scratch, but actually a combo from 2 Duncan Hines baking mixes. I've derived this Duncan Hines Double Decker Bar Mix hybrid simply because that brand has been unfortunately discontinued at my local supermarkets. It's a great desert for 10-16 people or a little pre-exercise pick-me-up (seal up and refrigerate after 1st day's use). Bake time and temperature is based on using a 9" x 13" rectangular pan (such as Pyrex brand).

 

INGREDIENTS:

1 box of Duncan Hines Milk Chocolate Chunk Bar Mix or
1 box of Duncan Hines Chocolate Chip Cookie Mix

1 21 oz. box (or close) of any brownie mix (like Duncan Hines Chewy Fudge Brownie Mix)
3-4 eggs or
1 pint carton of liquid egg substitute
1/3 cup of oil*
additional 1/2 cup of oil*

1/4 cup of water

1/4 cup of raisins (optional)
ice cream or
frozen yogurt (optional)


*you can substitute oil for applesauce in the same quantities. The result is having your cookie-brownie more cake-like and a bit easier to scoop from the oven pan once baked.

PUTTING IT ALL TOGETHER:

1) Follow the instructions for the cookie layer (on the back of the Chocolate Chunk Bar Mix or the Chocolate Chip Cookie Mix). Be sure to spread out the cookie layer all over the bottom of the pan with a spatula or the back of a large stirring spoon. Sprinkle raisins on top if desired.

2) After emptying your mix bowl, follow the instructions for the brownie layer (on the back of the Chewy Fudge Brownie Mix)! Try to pour the brownie layer evenly over the cookie layer to cover everything. It may be far from perfect, that's ok. Use a spatula or the back of a large stirring spoon to spread and cover up any remaining cookie-exposed areas.

3) Preheat oven then bake at 325 degrees fahrenheit for 55 minutes (do not cover). Let cool down for a least 5 minutes afterwards, then start cutting. Serve with dishes of vanilla ice cream or frozen yogurt for an extra heaven.

SPECIAL NOTE - DOUBLE DECKER MIX:

For those of you fortunate enough to have Duncan Hines Double Decker Bar Mix at your local store, you have a quantity choice. Follow the recipe simply from the back of the box to make about half the amount that this recipe makes. For the full amount, simply use two Double Decker mixes, combining the two brownie packets, combining the two cookie packets, doubling the ingredients, and sticking to 325 degrees / 55 minutes!
